Roasted Brussel Sprouts with Bacon

  • 1 pound brussel sprouts
  • 6 slices thick cut bacon
  • 2 tbsp olive oil
  • 1 lemon


  1. Preheat the oven to 425 degrees Fahrenheit. Rinse the Brussel sprouts and cut them into halves. 

  2. Toss the halved Brussel sprouts in a large bowl with a large drizzle of olive oil. Season generously with salt and pepper. 

  3. While the oven is preheating, cut the bacon into 1/4 inch strips. Cook in a large pan over medium heat about 8 minutes or until fully cooked and crispy. Do not drain the excess grease. 

  4. Roast the Brussel sprouts on a large sheet pan for 25 minutes. About halfway through, remove the Brussel sprouts from the oven and toss with a spatula. Drizzle the Brussel sprouts with the excess bacon grease and return to the oven. 

  5. When the Brussel sprouts are fully cooked, remove from the oven. Add a squeeze of lemon and combine with the bacon. Season with more salt and pepper.
