A couple of years ago, I went skiing at a super posh resort with my husband and his mother and a couple of friends.
While I do love to ski, I’m not a huge fan of all day physical activity/exertion, so I am typically satisfied with my day of skiing after 2-3 good runs. That leaves me plenty of time to explore the excellent cuisine of cute little mountain towns while my husband and his friends get their full day in.
To make a long story short (too late!), I was browsing the menu at Beaver Creek Resort while sipping a mimosa when I came across the most decadent grilled cheese recipe I had ever encountered; and after tasting this amazing concoction, I knew I had to create my own gourmet grilled cheese recipe for myself.
While I do love cheese of all kinds (I do not discriminate!) I will admit that one of my favorites cheeses is Brie. And the only thing I love more than a good Brie itself, is a melty Brie. Now that you have this melty Brie vision in your mind, I would like you to picture it combined with prosciutto (or delicious Bacon if prosciutto isn’t your thing)!

To offset the extremely savory flavor profile, I decided to add something sweet but also decadent: fig jam. Sliced figs themselves would be an excellent option, however, I find spreadable jam to be the best version of figs for a sandwich.
I topped everything off with some caramelized onions to seal the deal.
Basically, I became totally inspired by this ski resort grilled cheese and decided to take four of my most favorite ingredients EVER and combine them all to make “The Best Gourmet Grilled Cheese and Prosciutto Recipe Ever.”
The Best Gourmet Grilled Cheese and Prosciutto Recipe Ever
- 1 wheel Brie Or camambert as a substitute
- 3-4 slices prosciutto Bacon is an acceptable substitute if you don't have prosciutto on hand
- 2 oz fig jam
- 1 small yellow onion
- 4 slices sourdough or wheat bread Any bread of your choosing will do
Halve, peel, and thinly slice the onion. Slice the Brie into 1/8 inch thick pieces.
In a small pan over medium heat, heat one tbsp butter. Add onions to pan and cook until caramelized, about 6 minutes.
If using prosciutto: preheat oven to 350. Add a thin layer of olive oil to a sheet pan. Lay the pieces of prosciutto out on the pan and bake for about 5 minutes or until lightly crispy. If using bacon: cut the bacon into small strips and sauté over medium heat until crispy, about 7-8 minutes. Drain excess grease on a paper towel.
Spread two pieces of bread with fig jam. Layer the cheese (about 3-4 inch wide slices per sandwich each) over the jam. Spread the bacon or prosciutto evenly across the cheese. Top each side of the sandwich with the caramelized onions and the other piece of bread.
Heat 1 more tbsp butter in a pan over medium heat. Add the sandwiches, cooking each side in the butter until cheese is melty and the bread is lightly browned to your liking. Flip and repeat on the opposite side.
